šš¾A sneak peek šš¾ at some of the guidelines from our 2020 Challenge guidebook. This 'breakfast bowl' is an easy way to help achieve your veggie target for the day. Plus, it doesn't just have to be a brekky meal. It can be eaten at any time! Have it for a nice healthy lunch or dinner also and your taste buds will be wanting more and more!
INGREDIENTS
4 x kale leaves, chopped roughly
1/2 cup of mixed asian mushrooms
1/2 red onion, roughly chopped
2 x eggs, boiled
1/2 an avocado
1 tsp chilli flakes
1 tbsp of tamari
4g sesame seed and nori mix
1tbsp olive/coconut oil
METHOD
Place your eggs into a medium pot and boil/simmer until they are cooked the way you like them. Peel and leave to one side.
Add a dash of oil to a large pan or wok. Add in the kale, mixed mushrooms and onion. Fry for a few minutes before adding the chilli and tamari.
Slice your avocado into big chunks.
Arrange your kale mix onto your plate with the boiled eggs and avocado. Sprinkle with your sesame seeds and nori flakes.
Season to taste.
Note: If you're not too keen on eating tamari, sesame seeds and chilli in the morning just leave them out and top with lemon and fresh herbs for a light, zingy alternative!
