Cinnamon and Cardamom Fat Bombs

Working at home brings many a-perk, however there are a few downfalls too. One of which being the close proximity to the kitchen.... you feel me?


Set yourself up for success when you feel the pantry calling and make sure you have healthy treats at the ready!


These little babies are quick to make, tasty as heck and full of healthy fats so just 1 or 2 of them will give you oodles of energy to see out the rest of the work day!



INGREDIENTS:

  • 90g unsalted butter

  • ½ cup unsweetened finely shredded coconut

  • 1 tsp ground cardamom (green)

  • 1 tsp ground cinnamon

  • ½ tsp vanilla extract


METHOD:

  1. Bring the butter to room temperature.

  2. Roast the shredded coconut carefully, over medium high heat, until lightly browned. This will create a delicious flavor, but you can skip this if you want. Let cool.

  3. Mix together butter, half of the shredded coconut and spices in a bowl. Chill mixture in refrigerator for 5-10 minutes, until slightly firm.

  4. Form into walnut sized balls. Then roll the balls into the remaining shredded coconut.

  5. Store in refrigerator or freezer.
