Quinoa Salmon Brekky Muffins

When we talk about food prepping over the weekends to ensure you are never caught out having to make an impossible healthy decision, this is exactly what we are thinking. These little babies should be on your prep list every week!


A tasty little morsel that travels well and can be enjoyed hot or cold, they will surely get you out of a nutritional pickle more than once!



INGREDIENTS:

  • 1 x tsp of olive/coconut oil

  • 2 x eggs

  • 1/2 x cup of cooked quinoa

  • ½ an onion

  • 1/2 zucchini

  • 2 x sprigs of thyme

  • 30g hot smoked salmon** optional


METHOD:

  1. Preheat the oven to 160 degrees C.

  2. Pan fry the onion in some olive/coconut oil. Add in the zucchini and cook through. Put to one side.

  3. Crack the eggs into a bowl and beat. Add in the zucchini, thyme, quinoa and salmon and stir ingredients.

  4. Line your ramekin dishes with baking paper.

  5. Pour in the mixture

  6. Place the ramekins into the oven and cook for 25 minutes.

  7. Enjoy!
