Stuffed Mini-Bell Peppers

Doing the 28 day challenge? Looking for some challenge friendly snacky-snacks to get you through in case the hunger hits between meals? Whip up a batch of these babies and you'll be completely satisfied!



INGREDIENTS:

  • 8 mini bell peppers

  • 200g cream cheese

  • 30g air-dried chorizo, thinly sliced

  • ½ tbsp mild chipotle paste

  • 2 tbsp olive oil

  • 1 tbsp fresh thyme or fresh cilantro

METHOD:

  1. Split the bell peppers lengthwise and remove the core.

  2. Chop the chorizo and herbs finely.

  3. Mix cheese, spices and oil in a small bowl. Add chorizo and herbs, and stir together.

  4. Spread out the cheese cream into the bell peppers and serve as a snack or appetizer.
