Taco Lettuce Cups

Is there anyone in the world who doesn't like Mexican food? Show me that person and I will eat my hat! 🎩😆 This recipe is a tried and true simple and tasty meal that offers all the flavours and won't break the belt. An excellent week night rotation option that will please the whole fam.



INGREDIENTS:

  • 2 tbs extra virgin olive oil

  • 1 red onion, finely chopped

  • 1 red capsicum, deseeded, finely chopped

  • 500g Woolworths lean beef mince

  • 30g sachet taco seasoning

  • 375g jar mild thick & chunky salsa

  • 1 baby cos lettuce, trimmed, leaves separated

  • 2/3 cup shredded tasty cheese

  • 1 avocado, finely chopped

  • 1 large tomato, finely chopped

  • 1/3 cup coriander leaves

METHOD:

1. Heat oil in a large frying pan over medium-high heat. Cook onion and capsicum, stirring, for 4 minutes or until softened. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add seasoning and cook, stirring, for 1 minute or until fragrant. Add 1/2 cup each of the salsa and water, stirring to combine. Cook for a further 2 minutes or until slightly thickened.

2. Place lettuce leaves on a board, then spoon mince mixture onto leaves and top with cheese, avocado, tomato and coriander. Serve with remaining salsa.
